HOLIDAY BEANS AND CRANBERRIES
from Betty Crocker's Holiday cookbook
Contributor: Donna

Cook beans as directed on package, adding orange peel before cooking; drain. Stir in cranberries and honey. Top with bacon bits. 4 servings.
*Substitution: you can use 1 lbs of fresh green beans. Leave beans whole, or cut into 1" pieces. Boil uncovered 7 minutes or until crisp tender.
*Special Touch: For a festive look that says holiday, arrange the green beans on a platter in the shape of a wreath. (They have a picture with fresh orange wedges and berries in the center of the "wreath")

MAKE-AHEAD MASHED POTATOES
Contributor: Cindy Stier

Peel potatoes, cook until tender and drain. Beat softened cream cheese with Half & Half with mixer. Add hot potatoes and blend well. Add butter and seasoning. Put in casserole. Brush top with butter and sprinkle with paprika. Can be prepared ahead and refrigerated. Bake just enough to heat through and brown top. *NOTE: When I make these, I just mash the potatoes with my hand mixer and add all other ingredients at once and beat. This works just fine. Enjoy!

*NOTE FROM DONNA
I made these potatoes and they are delicious!

POTATO SALAD

Mash potatoes and eggs until fine, (I use the kitchen aid with the wire attachment ) add mustard and stir well. Add seasoning and mayo one TB at a time until nice and creamy. Variations may be made by adding chopped onions and chopped sweet pickles. Also, for a larger batch of salad, add potatoes and eggs as needed.
