IMPROV Aubergine (Eggplant)

10 aubergine
1 cup milk
6 eggs
2 cups wheat flour
1 cup olive oil
10 cups red sauce (see below)
4 cups shreaded cheese
salt & pepper to taste

Beat the eggs & milk with a wire whisk or fork & add salt & pepper to taste.

Cut aubergine into 1 inch slices & dip into egg mixture, one at a time.

From egg mixture, coat each aubergine slice with flour and place into heated frying pan which has been precoated with olive oil.

Fry until golden brown, and then place one layer of aubergine into a deep dish baking pan.

Cover this layer with red sauce & shreaded cheese.

Repeat this process until baking pan is completely full.

Place into preheated 350° oven & bake for 25-30 minutes, or until cheese is golden brown.

Serve warm or cold depending on your preference.
