Mayflower Banana Nut Bread
(Makes One Loaf, Approximately 4”x10”)

Ingredients:
1)   6 oz. Sugar
2)   1/5 tsp. Salt
3)   1 ½ oz. Pecan Pieces
4)   3 oz. Butter
5)   6 oz. Banana
6)   1 ½ oz. Cake Flour
7)   1.4 tsp. Baking Soda
8)   3 oz. Sour Cream
9)   1 tsp. Vanilla Extract
10) 3 Eggs
11) 3 oz. Bread Flour

Preparation:
1)   Cream the butter and sugar.
2)   Add the banana.
3)   Beat in eggs slowly.
4)   Add bread flour, cake flour, baking soda and salt.  Mix well.
5)   Add sour cream, pecan pieces and vanilla extract.
6)   Bake approximately 60 minutes at 350°F.
7)   Pull and let rest for about 10 to 15 minutes before un-molding and slicing.


Banana Nut Bread Parfait
(Makes approximately 4 parfaits)

Ingredients:
1)   2 cups Banana Nut Bread (cut into small cubes)
2)   2 cup Vanilla Yogurt
3)   1 cup Blueberries
4)   1 cup Raspberries
5)   1 cup Large Diced Kiwi
6)   1 cup ¼ cut cleaned Strawberries

Preparation:
1)   Place 1 thin layer of yogurt at the bottom of a glass.
2)   Place 1 thin layer of banana bread.
3)   Place 1 thin layer of blueberries.
4)   Place 1 thin layer of raspberries.
5)   Place 1 thin layer of yogurt.
6)   Place 1 thin layer of strawberries.
7)   Place 1 thin layer of kiwi.
8)   Place 1 thin layer of banana bread.


Banana Nut Bread Napoleon
(Makes 4 servings)

Ingredients:
1)   Twelve ½ inch slices of Banana Nut Bread
2)   1 ½ cup Pastry Cream (see recipe below)
3)   8 whole Strawberries - sliced
4)   1 cup Blueberries
5)   1 cup melted White Chocolate
6)   1 ½ cup Worm Banana Mix (see recipe below)

Preparation:
1)   Lay out the 8 pieces of banana bread and spread on the pastry cream.
2)   On 4 pieces of banana bread that have pastry cream layer the sliced
       strawberries.
3)   On 4 pieces of banana bread that have pastry cream layer the blueberries.
4)   Put the banana bread with the blueberries on top of the banana bread
       with the strawberries (blueberry side up).
5)   Place the remaining piece of banana bread on top.
6)   Press a little to seal the pieces together.
7)   Place the 4 napoleons on a wire rack over a cookie tray.
8)   Take the melted white chocolate and drizzle over the top of the banana
       bread so it runs a little over the sides.

The Pastry Cream
(Makes 2 ¾ cups)
Ingredients:
1)   2 1/4 cups Milk
2)   4 large Egg Yolks
3)   2/3 cups Sugar
4)   1/4 cup Corn Starch
5)   1/4 cup Flour
6)   2 tsp. Vanilla Extract

Preparation:
1)   In a medium saucepan, heat 2 cups milk to boiling.
2)   While milk is heating, whisk egg yolks, sugar and remaining 1/4 cup milk.
       Whisk in cornstarch and flour until smooth.
3)   Temper the egg mixture by slowly whisking in about 1/3 of the heated milk,
       then whisking in remaining milk.
4)   Return mixture to saucepan and cook over medium-high heat until mixture
       thickens and boils, whisking constantly.
5)   Reduce heat to low and cook for another 2 minutes. Remove from heat
       and stir in vanilla.
6)   Pour into a bowl, press plastic wrap on the surface to prevent a skin from
       forming and cool to room temperature before chilling for at least 2 hours.

The Worm Banana Mix
(Makes 2 cups)
Ingredients:
1)   1 tbs. Butter
2)   2 cups sliced Bananas
3)   ¼ cup Brown Sugar
4)   2 oz. Banana Liquor
5)   1 tsp. ground Cinnamon
6)   ¼ tsp. ground Nutmeg

Preparation:
1)   Heat the butter over a medium high heat.
2)   Sauté the banana for about 1-2 minutes.
3)   Add in the brown sugar, cinnamon, nutmeg and banana liquor.
4)   Cook for about 2 minutes.
5)   Remove from heat and serve.


Open Faced Banana Bread with Berries & Vanilla Cream
(Makes 4 servings)

Ingredients:
1)   Four 1” Sliced Banana Nut Bread
2)   2 Cup fresh mixed Berries
3)   1 cup fresh Vanilla Whipped Cream (see receipe below)
4)   4 oz. Vanilla scented Sweet Cream (see recipe below)

Preparation:
1)   Place 1 slice of banana bread in the center of the plate
2)   Mix the fresh berries with the vanilla sweet cream
3)   Place berry mixture on top of the banana bread
4)   With a small spoon scoop out a little whipped cream and place over the
       berries.

The Vanilla Whipped Cream
Ingredients:
1)   1 ½ cup Whipping Cream
2)   1 tbs. Vanilla Extract
3)   1 oz. Confectioner Sugar

Preparation:
1)   Combine all ingredients in a bowl and whip with a balloon whip until it reaches
       a soft peek.

The Vanilla Scented Sweet Cream
Ingredients:
1)   2 cups Whipping Cream
2)   ½ Vanilla Bean
3)   ¼ cup Sugar

Preparation:
1)   Split the vanilla bean in ½.
2)   Scrape out the center of the bean and mix in a sauce pot with the cream and
       sugar.
3)   Heat the cream and simmer until the mix and reduced by ½.
4)   Cool.
