Madeleines
Preparation:
1) Cream sugar and butter.
2) Add eggs, one at a time, beating until incorporated.
3) Add vanilla, baking powder, and flour.
4) Stir just until flour is mixed in. Stir in
lemon zest.
5) Grease and flour molds. Pipe batter into
molds.
6) Bake at 375 degrees until lightly browned on edges.
7) Remove and cool on racks.
8) May be glazed with dark or white chocolate.
