 7 - Up Cake

Ingredients:
1)  1 1/2 cups Butter, softened
2)  3 cups Sugar
3)  5 Eggs
4)  3 cups All-Purpose Flour
5)  2 tsps. Lemon Extract
6)  3/4 cup 7-Up
7)  Powdered Sugar

Preparation:
1)  Preheat oven to 325 degrees and lightly grease and
      flour a bundt pan.
2)  Beat butter and sugar until thoroughly mixed.
3)  Add eggs, beating well after each one.
4)  Slowly add flour, lemon extract, and 7-Up.
5)  Mixture will be smooth and very thick.
6)  Pour cake mixture into bundt pan and bake for
      1 to 1 1/4 hours or until toothpick inserted comes
      out clean.
7)  Cool thoroughly on a rack and remove cake from pan.
8)  Dust with powdered sugar and serve.


Macaroons

Ingredients:
1)  2/3 cup Sweetened Condensed Milk
2)  1 large Egg White
3)  1 1/2 tsp. Vanilla Extract
4)  1/8 tsp. Salt
5)  3 1/2 cups Coconut Flakes

Preparation:
1)  Preheat oven to 325 degrees.
2)  Line baking sheet with parchment paper or
      aluminum foil.
3)  Mix first four ingredients in medium sized
      bowl until blended.
4)  Stir in coconut and mix well.
5)  Drop the mixture by tablespoonful onto baking
      sheet, 2 inches apart.
6)  Bake for 20 to 25 minutes or until lightly golden.
7)  Cool completely, then carefully peel cookie
      from foil or paper.


Pecan Sandies

Ingredients:
1)  1 cup Butter, softened
2)  1/3 cup Sugar
3)  2 tsp. Water
4)  1 tsp. Vanilla Extract
5)  2 cups All-Purpose Flour
6)  1 cup Pecans, coarsely chopped
7)  Powdered Sugar

Preparation:
1)  Preheat oven to 325 degrees.
2)  Whisk softened butter and sugar until
      thoroughly incorporated.
3)  Add water and vanilla extract.
4)  Gradually add flour to butter mixture and
      mix until well blended.
5)  Add pecans and mix well.
6)  Using a tablespoon of dough, shape into round
      balls or oval shapes and place on an ungreased
      baking tray.
7)  Bake at 17-20 minutes or until cooking bottoms
      are lightly golden brown.
8)  Cool for 10 minutes, then roll in powdered sugar.
9)  Serve and enjoy!
