--a note on traps--
if you are thinking of leasing an existing restaurant, check out with the village the grandfather rights to a grease trap.  Some will allow the restaurant to NOT have a trap (or a below ground trap) as long as the lease/ownership belongs to the original owner/lessee.  Once a new owner/lessee takes over, a new trap may have to be dug up...a costly mistake???
