UNIFORMS should represent your establishment. They can be highly fashionable with many colors, or traditionally elegant (tuxedo, bow tie's, etc) At any rate, make sure that the uniform is not too constrictive and allows freedom of movement. If you require a specific uniform to be worn, you must supply your waitstaff with them. Most require a deposit from their staff, something that is not really viewed as being fair from the staff. Otherwise, you can instruct your staff for example to wear black pants/skirt with a white tuxedo shirt and black bow tie. REMEMBER that a customer has his very first impression (of looking at your dining room (and table setting) as well as how the staff is dressed) upon first view after walking in -- this tells them just what kind of service and expense will be entailed. So decorate, design and dress accordingly, and along the lines that your menu represents. LINEN companies have many different types of tableclothes available, as well as vinyl for sale (also ask your food purveyor). Most salespeople can instruct you on, or supply a booklet on different styles of folding napkins. Wether to go with paper or linen napkins is highly up to you and the type of establishment you have.
